Honey Whole Wheat Banana Bread

Naturally sweetened honey whole wheat banana bread enriched with the nutty flavor of whole wheat flour and fragrant aroma of ripe bananas.

Ingredients

  • 2 Cups White Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 2 Large Eggs, Room Temperature
  • 3 Ripe Medium Bananas ( about 1 1/2 Cups)
  • 1/2 Cup Honey
  • 1/4 Cup Plain Yogurt, Room Temperature
  • 1/4 Cup Flavorless Oil, i.e. Grapeseed/Vegetable Oil
  • 1 Teaspoon Vanilla Extract

Instructions

  1. Preheat oven to 325F. Lightly grease and line a standard loaf pan with parchment paper. Set aside.
  2. Add the flour, baking powder, baking soda and salt into a medium mixing bowl. Whisk to combine.
  3. In a separate medium mixing bowl, add ripen bananas and used a fork to mash into a puree. It is ok if small chunks of banana are present.
  4. Into bowl with mashed bananas, add the eggs, oil, yogurt, honey and vanilla extract. Whisk to combine.
  5. Pour liquid mixture into bowl with dry ingredients and mix until honey whole wheat banana bread batter comes together without any streaks of flour present. Take care not to overmix batter.
  6. Add batter into prepared loaf pan and bake for 60 minutes rotating the pan halfway through bake time. Honey whole wheat banana bread is done once a toothpick inserted into center comes out clean.
  7. Allow honey whole wheat banana bread to rest in pan for 5 minutes before transferring to a cooling rack to cool completely to room temperature, about 1 hour.
  8. To serve, slice honey whole wheat banana bread into equal pieces.  

Notes

  • In place of honey, may substitute with maple syrup for a maple whole wheat banana bread.
  • Want to jazz up honey whole wheat banana bread, some great add-ins would be nuts (i.e. walnuts or pecans) and/or chocolate chips/chunks.
